CURRIED BEEF SAMOSAS WITH MANGO PAPAYA CHUTNEY:

Serves 36
For chutney:
1 ripe mangoes, peeled, pitted, chopped
1 papaya, peeled, seeded, chopped
1 cup finely chopped onion
1/4 cup white wine vinegar
1/4 cup sugar
1/8 tsp cayenne pepper
2 tbsp dried currants
salt and pepper
For samosas:
1 tbsp vegetable oil
1 1/3 cup finely chopped onion
1 lb lean ground beef
2 tbsp curry powder
1 tsp all purpose flour
36 wonton wrappers
1 egg, beaten with some water to blend
Vegetable oil, for deep frying
For chutney:
Combine all ingredients except currants in medium saucepan. and simmer until onion is tender and mixture thickens slightly.
Stir in currants. Set aside and chill.
For samosas:
Heat 2 tbsp oil in heavy large skillet over medium high heat and add onion.
Sauté until translucent, about 5 minutes.
Add beef and sauté until brown, breaking up clumps with back of spoon, about 5 minutes.
Add curry powder and flour and sauté 2 minutes longer.
Transfer beef mixture to colander and drain oil and cool.
Lightly flour baking sheet. Arrange 12 wonton wrappers on work surface.
Spoon 1 tablespoon filling in center of each.
Brush edges with egg.
Fold each wrapper diagonally in half, forming triangle.
Press edges together to seal.
Repeat with remaining wrappers and filling.
Add enough vegetable oil to heavy large saucepan to reach depth of 4 inches.
Fry samosas until golden brown, about 2 minutes per side.
Transfer samosas to paper towels to drain oil.
Serve samosas with chutney.
DURBAN ROTI:

(A type of pancake filled with curry, or used as bread to mop up all the curry juices)
3 cups flour
1 t salt
3 T oil
enough water to form a soft dough
1 cup soft butter or margarine
oil for frying
Mix the flour and salt in a large mixing bowl and add the oil.
Rub in until the mixture resembles fine breadcrumbs.
Add water and mix to a fairly soft dough.
Roll out on a floured surface and roll to the size of a 23 x 32cm rectangle.
Spread the dough with softened butter and roll it up like a Swiss roll.
Cover with a tea towel and leave for 30 minutes.
Break off pieces of dough and form into balls the size of tennis balls.
Roll out each ball into a disc the size of a dinner plate.
Fry in hot oil for 2 minutes on each side.
Serve immediately with a curry filling, or on the side.

Weg sê: Een geklitste eier by die koue aartappelmengsel sal sorg vir ’n rosti wat nie maklik uitmekaar val nie. Die spek kan weggelaat word. Of wat van ’n hand vol fyn biltong in die plek daarvan?

Vir dié aartappelkoekies het jy nét drie bestanddele nodig! As ons vroeg die langpad vat, kook ek die aartappels die aand voor die tyd, en dan maak ons iewers langs die pad ontbyt op die braaier.
Jy benodig
•6 middelslag-aartappels, geskil
•1 teelepel sout
•1 pakkie (250 g) repiespek, gesnipper
•kleefwerende kossproei (die olyfolie-soort of gewone Spray & Cook)
Só maak jy
1.Kook die aartappels heel in kokende water totdat dit halfpad gaar is. Laat dit heeltemal afkoel – verkieslik oornag. (Jy kan dit ook vir 6 minute op hoog in die mikrogolf gaarmaak.)
2.Rasper die aartappels grof , voeg sout en die gekapte rou spek by en meng alles liggies deur.
3.Sorg dat die plat kant van die braaierplaat goed warm is en spuit dit met Spray & Cook. (Jy kan ook ’n gewone pan gebruik.)
4.Skep 2-3 eetlepels van die aartappelmengsel op die plaat en druk dit met ’n eierspaan plat. Maak ongeveer vier sulke rosti’s op ’n slag en sit die deksel op. Draai dit ná sowat 5 minute met ’n eierspaan om, wanneer die rösti goudbruin is aan die een kant.
5.Sit dit voor met die lewer (resep hiernaas) of sommer saam met roereier vir ontbyt. Sorg maar dat jy genoeg maak, want mense sal altyd nog plek vind vir nog een.
VINNIGE MAKLIKE WRAP: [deur ROLINE]
En hier is die WRAP/ROTI se resep as iemand dit wil probeer. Nooit gedink dis so maklik nie!

METODE:
Jy voeg dit als bymekaar(versigtig is bietjie warm) Bewerk en knie tot lekker stywe, uitrolbare deeg.
Rol gholfbalgrote balle, poeier met meel en rol elkeen so 1 tot 2 mm dik uit.
Bak dit in 'n warm (nie rooiwarm), l.w. vetvrye pan net tot dit begin blase maak. Kyk dat nie brand ...nie.
Draai om en bak ander kant.
Wenk van Roline:
Die eerste paar het maar woes gelyk! Maar gooi genoeg meel op die toonbank. Dan meel op die deeg. Rol so bietjie, draai 90 grade. Rol bietjie, draai 90 grade. Tot dit mooi rond en dun is. Dan in 'n warm warm pan. Laat die pan eers op die plaat staan en warm raak vir 'n ruk. Droë pan.
SURF AND TURF WRAPS: [YUMMY]
Three small top round sirloin steaks marinated in garlic, Mexican chili powder, Worcestershire sauce, olive oil and salt and pepper to taste.
Small packet of shrimp marinated in garlic, Mexican chili powder, lime juice and olive oil 1 red pepper, 1 green pepper and 1 onion sauteed with a bit of olive oil in a cast iron pan.
Before those veggies get too well done add the steak to the screaming hot pan to get it seared well on the surface.
Only cook it for a few minutes on each side so it remains medium rare Remove the steak to rest and saute the shrimp for 2-3 minutes.
Turn off the heat, slice the steak and add it back to the pan to keep warm.
Warm up the tortillas in the microwave according to the package directions.
Let the building begin. Start with the tortilla then add some peppers, onions, steak and shrimp. Add some avocado slices and sour cream before rolling them up to devour.

•2 cups chopped cooked chicken

•1 (0.4-ounce) package Ranch-style buttermilk dressing mix
•1/4 cup chopped ripe olives
•1/2 small onion, diced
•1 (4.5-ounce) can chopped green chilies, drained
•2 tablespoons chopped fresh cilantro
•1/2 teaspoon black pepper
•8 (6-inch) flour tortillas
What To Do:
1.Drain roasted peppers well, pressing between layers of paper towels; chop peppers.
2.Stir together roasted peppers, chicken, and next 7 ingredients. Cover and chill at least 2 hours.
3.Spread mixture evenly over tortillas, and roll up. Cut each roll into 5 slices, securing with wooden toothpicks, if necessary.

60g lean smoked ham, finely chopped
1 each, small red and green pepper, seeded and sliced
500ml shredded spinach
500ml canned chickpeas, drained
METHOD:
Heat the oil in a saucepan.
Add the onion, cumin and chilli to the hot oil.
Fry until the onion has softened.
Add the ham and fry until lightly browned.
Add the peppers and spinach and continue to cook until the spinach wilts.
Add the chickpeas and vegetable stock and cook until heated through. Serve warm.
Make wraps by rolling up in a flour tortilla or spoon into wholewheat pita breads.
