CUPCAKE MAKER MINI PECAN PIES:
To be completely honest, this was the whole reason I bought the cupcake maker... So that I could make mini pies! And oh boy, I made these and they were DELICIOUS! If you don't have the mini pie maker, then please double the recipe for the filling, and that will make a whole pie.
1 prepared, uncooked (9 inch) pie crust
1 tablespoon butter, melted
1/4 cup brown sugar
2 tablespoons dark corn syrup
1/4 teaspoon salt
1 egg
3/4 cup pecans, chopped if desired
Follow directions on pie crust to thaw and unroll. Cut 8 circles in pie crust with pie crust cutter. Press into cupcake maker to make pie shells.
Whisk together the butter, brown sugar, dark corn syrup, salt and egg. Stir in pecans. Spoon about 2 tablespoons of pecan mixture into each shell.
Bake in cupcake maker for 10-12 minutes, until crust is browned. Remove and allow to cool. Serve with whipped cream or ice cream.
CUP CAKE MAKER FRITTATAS:
Today I discovered a new use for my cupcake maker!!
I wanted to make some frittatas, but I didn't feel like waiting for my entire oven to heat. I used whatever ingredients I had in my fridge, mixed 'em up, and poured them into my cupcake maker. I used six eggs, some milk to make 'em fluffy, cilantro (our favorite!), shredded cheddar cheese, whatever bacon bits we had left, a couple of scoops of salsa (because I didn't feel like slicing onions and tomatoes), and a pinch of salt and pepper. I love recipes like this because there's really no measuring and it's hard to screw up. Also, they're beautiful.
CUPCAKE MAKER MINI CHICKEN POT PIES:
Cupcakes + Dinner = Mini Chicken Pot Pies made in the Babycakes Cupcake Maker.
These were really easy to make and taste great. I used the ready made pie crusts that you can pick up in the refrigerator section of your grocery store, frozen veggies, grilled chicken strips and made a sauce of cream cheese, milk and a bit of cornstarch for thickener. You could really use any chicken pot pie filling recipe – so whatever your favorite may be, go for it.
I followed the instructions that came with the Cupcake Maker on how to use it for pie crusts. They include this great little tool with the Cupcake Maker that allows you to cut out the perfect size crusts, tops and also helps you push the crust down into the wells in the maker. It ended up being so much easier than I was expecting it to be.
After cutting my pie crust circles, I set them into the Cupcake Maker, pushed them down with the insert they provide, then added my filling. After you have your filling in, put the tops on your pies, add a bit of an egg wash, and close the cupcake maker to cook for 12-15 minutes. That’s it! You now have adorable and delicious mini pot pies.
CUPCAKE MAKER MINI CORN DOGS:
You need a corn muffin mix, made as directed on package.
Hot dogs cut up..and that’s it!
You fill each half way up and stick the hotdog slice in center and then top with enough batter to cover the hot dog.
